La Tortilla Factory
Problem: Santa Rosa-based La Tortilla factory was searching for an additional warehouse to keep finished goods. Management also saw a need to increase their operational efficiency and financial performance. They specifically wanted to increase their throughput, as well as reduce waste and excess inventory.
Solution: Manex used value stream mapping to identify high-impact opportunities. We also adapted the Just in Time approach to fit the needs of La Tortilla Factory, ran several kaizen events, and implemented KPIs to sustain and measure improvement.
Results:
- Manex optimized the client’s facility layout, eliminating the need for a new warehouse and saving an estimated $1M per year.
- Increased the client’s total yearly capacity by 40% due to a new scheduling system we implemented,

Scheid Vineyards
Problem: The Monterey-based Scheid Vineyards (SVI) sought help improving their harvest operations. With 13 separate vineyards providing grapes for wineries around California, they wanted to calculate the efficiency of their new mobile harvest inventory system, as well as identify other ways to increase efficiency.
Solution: Manex led a process that first sought to define and understand the problem and goals. We observed and measured the current state and conducted Root Cause analysis to create a process map. The process map allowed our food manufacturing process consultants to identify the man hours and cycle times for each process, which were then used to calculate gained efficiencies, as well as identify other areas for improvement.

- Implementation of a mobile harvest inventory tracking system
- The new mobile tracking system contributed to approximately $30,000 of time saved per harvest, and $400,000 per harvest season.
